The all-American breakfast has taken on a new California twist with a dish that starts with a soft-boiled egg, wrapped in a whole avocado, then wrapped in a thick piece of bacon and topped with cheese.
It’s Chef Dakota Weiss of Estrella in West Hollywood‘s creation, and she artfully named it the the “rolling stone.”
“It’s like the ultimate California brunch item for the foodies of the world,” Weiss told Breitbart News over the phone on Friday, as she was getting ready to prepare Estrella’s “catch of the day” for the evening crowd.
Asked where she drew her inspiration for the dish, Weiss said she said she had traveled to visit her friend William Werner, who is a chef at the restaurant Craftsman and Wolves in San Francisco. There, she discovered his dish known as the “Rebel.” It’s a cheddar muffin with pork built into the bread, which has a soft-boiled egg inside. “When you cut into it, the yolk runs out,” Weiss explained. “I wanted to create something with that same ‘ooh and ah’ sense without stealing his idea,” she told Breitbart News.
LAist recently paid a visit to Estrella on Sunset Boulevard and pointed out that, in addition to the “rolling stone,” bacon lovers can rejoice with the dining establishment’s candied, pretzeled bacon served in mason jars.
Estrella is open seven days a week. On Monday through Thursday they operate between 7 a.m. and 12 a.m.; Friday between 7 a.m. and 1 a.m.; Saturday between 10 a.m. and 1 a.m.; and on Sunday between 10 a.m and 10 p.m.
